It is getting cooler in Florida, which means it is time to break out the big pots, the crockpot, and all the easy and warm recipes. Some of these are ones I have already made or that I want to make. I have been trying to inspire myself more to cook things I have never had, but sometimes you just need that classic go-to recipe. Hopefully reading this post will inspire you to try some of these easy fall recipes.
I am making room in my freezer for all the wonderful leftovers I will have. It is a must to make extra so I can toss it in the freezer and when a night rolls around that I don’t feel like cooking. I will take out a container from the freezer and toss it in the crockpot or a pot on the stove. Talk about a quick and easy dinner. LOL
Chili
I don’t know what it is about Chili. It is so delicious. As soon as the weather dropped a little bit I said to Mike I was making Chili.
Fun fact – Chili brought me and Mike together when we first started dating. During our first phone conversation after meeting on Plenty of Fish. Mike asked me what I was doing. I said my roommate and I were making Chili and he responded “oh I love chili. I can make some wicked chili. (that’s the Boston, coming out)”. He then suggested we have a Chili cookoff. It took us about 4 years to have the chili cookoff. Nobody won (I did), they were both delicious. But now we just trade off who cooks chili every year.
1lbs ground beef (tip- make tacos the day before and throw your leftover meat in the chili)
1/2 Onion
Worcestershire sauce 1 tbsp
Dark red kidney beans 1 can
Mixed chili beans 1 can
Black beans 1 can
Pepperoncini juice 1-2 tbsps (measure with your heart)
Hot sauce 1-2 tbsps (again, measure with your heart)
Minced Garlic 1-2 tbsps (you get it, measure with your heart)
1/2 tsp Garlic powder
1/2 tbsp Oregano
1-2 tbsp Chili powder
1/2 tsp Cumin
1 (16 oz) can diced Tomatoes
1 (16 oz) can Tomatoes paste
1/4 cup Water
Cheesy Ham and Potato Soup
Mike brought up this recipe to me. I have never had it, but he said he wanted to make it. He hasn’t had it in years. I am down. I found this recipe on The Food Cafe that we are going to try. Tell me that picture above does not look scrumdiddlyumptious!
Crockpot Chicken Pot Pie
You know I have to put this recipe on the list. I just posted about this a few days ago. Sorry, not sorry, I highly recommend this recipe. I have leftovers in the freezer and I might pull them out to toss in the crockpot. It sounds so good! This recipe is from the site This is not diet food. I am so glad I came across this recipe because it sparked the inspiration behind this post. I have printed out these recipes to put in my regular rotation.
If you love chicken pot pie, you will LOVE this recipe!
Pho’
I think Mike and I were watching Flavorful Origins on Netflix and they had an episode about Pho’. We had never heard of it or eaten it before. So we were super excited to try this. We have made it once but used Ramen noodles instead of Pho’ noodles. It was okay, but we wouldn’t use them again. We have been searching high and low for Pho noodles. Finally found them at Aldi’s, I think. So we bought 2 packs and will be making this easy fall recipe soon.
I can’t find the recipe we used, but you can look up one on Pinterest.
Chicken Tortilla Soup
When I make Chicken Tortilla Soup. I like to use up things I have in my kitchen. I toss salsa in there, hot sauce, corn, black beans, and garlic. Anything that I think sounds good goes in there. LOL If you don’t trust yourself I recommend following The Cozy Cook’s recipe.
Broccoli & Cauliflower Soup
This soup is just for me. Mike does not like Broccoli or Cauliflower. He always makes a gagging noise when I eat them. But I stumbled upon this recipe from Krolls Korner on Pinterest as one normally does and I just HAVE TO make it. It looks so good!
80 Garlic Clove Soup
I saw this recipe going around TikTok from a user named Food with Liz making 60-clove garlic soup. And other people kicked it up a notch and made a 100-clove garlic soup. I could NEVER EVER be a vampire because I live off of Garlic. I measure garlic with my heart, not a measuring cup.

I try to use my crockpot once a week. It doesn’t always work out that way, but I try. I forget how much I love “set it and forget it” meals.
I love this time of year becuase of the food and all the hearty, warming meals.
We love Chili but it’s a meal that I always forget about and rarely make it. That Cheesy Ham and Potato Soup looks amazing! I think I might have to give it a try. x
