It is decided… I am making this Easy Crockpot Chicken Pot Pie for dinner. No, ifs, and or buts!
Tell me I am not the only one who has a hard time deciding what to have for dinner? Nothing sounds good. You look at the to-go menu over and over… Nothing! You look up recipes… Nothing. It is this never-ending battle!
I am trying to up my cooking game guys! Mike and I eat the same meals every week. If we go out to eat and chicken tenders are on the menu… Most likely I am getting that. I have the palate of a toddler. And nowadays most toddlers have a better palate than I do.
We have got in this rut and it is time to get out of it. I am breaking out my crockpot because ain’t nobody got time to be cooking all day. Set it and forget it.
Easy Crockpot Chicken Pot Pie
Once a year I look up crockpot recipes because this is the time of year in Florida it starts to get a little cooler. Last week I made chili. I could share that recipe with you guys. So as I am scrolling on Pinterest I come across this recipe from the site This is not diet food.
Chicken pot pie sounded really good, but I have never had homemade pot pie. I grew up and still sometimes buy the little frozen ones that are okay, but I need something like it, but better. This recipe sounded amazing and it piqued my interest as well as Mikes.
So this Easy Crockpot Chicken Pot Pie is what’s for dinner.
What you need
Ingredients
- 1 cup diced yellow onions ( I don’t have an onion. So I am skipping it.)
- 1.5 lbs boneless, skinless chicken thighs ( I am using 3 pieces of chicken breast)
- 1 small can 10.5 oz of condensed cream of chicken soup
- 10.5 oz condensed cream of mushroom soup (1 small can)
- A packet 0.87 oz chicken gravy mix
- 1 tsp salt
- 1 tsp pepper
- 1/2 cup water ( I am using veggie stock)
- 1 small bag or 3 cups frozen mixed vegetables
- 8 baked biscuits or crescent rolls
Making the Crockpot Chicken Pot Pie
Grab your crockpot spray it with a cooking spray or use a liner. Whichever is your preference? For me, I am using cooking spray.
Put a layer of your diced onions and add your chicken on top in a single layer. Basically, we are just layering upon layering. then at the end we mixy mixy. LOL
So onion, chicken, then cream of mushroom and then cream of chicken. Add your little packet of chicken gravy mix with a little bit of salt and pepper. Erin says cook in your crockpot for 3.5 hours I don’t have a 3.5-hour setting so I am going for 4hours on high. I will check it every hour just to make sure we are all good.
Let all of this smelly goodness cook in your crockpot at the 2.5-hour mark take your chicken out and do a little shreddy shreddy. Add the chicken back and then add your little bag of mixed veggies.
Let your little pot of heaven cook for another hour or so.
My thoughts on this Crockpot Chicken Pot Pie
I used 4 pieces of chicken. That was a little much. You could make do with 2 maybe even 3 pieces. I think next time. I will cut my chicken into chucks. It definitely took longer than 3.5 hours, but that could have just been my slow cooker.
It is more soup-like than I wanted it to be. That again could have been my error, but it wasn’t creamy like the picture below. I will say for the minor tweaks I would make the next time I make it. Because there will BE A NEXT TIME. This soup was delicious.
I have 2 medium Tupperware containers of leftovers. Popped both of them in the freezer. So the next time I want some more Crockpot Chicken Pot Pie I can just easily toss it in! Remember set it and forget it!

I notice Americans use a lot of pre-made products in their recipes. If I had a can of mushroom or chicken soup I would eat that over making something with it!
